Burleigh Waters is ten minutes from the beach and twenty from a good fish shop, which is exactly why we keep a freezer full of the things worth having on hand.
We buy Australian and New Zealand seafood in small batches, freeze it hard and fast, and pack it in Burleigh with enough insulation to survive a Gold Coast summer delivery.
The range is short on purpose: prawns, lobster, squid, scallops and a few fillets, each chosen because it holds its texture through the freeze.
Every carton carries a freeze date and a lot number. If anything is not right, our inbox is answered by the same two people who packed it.
